I don’t know about you but some nights I need dinner, and I need it quick. I need a quick dinner and a plop on the couch. In order to save time I try to use left overs from earlier in the week to prepare said quick meals. So when I totally goofed and made too much dressing, I used it to take this super simple pasta dish to the next level.
When it comes to fast meals sometimes you’ve got to use what you have on hand. Feel free to change up the amount of broccoli or add in a different steamed green veggie such as asparagus, sugar snap peas, or green beans! Fresh is best, but I would go frozen over canned if you did how have access to fresh vegetables. For this particular recipe I also prefer to use the sundried tomatoes that are not packed in oil. That way the sweet yet tart flavor of sundried tomatoes don’t over power your awesome homemade dressing.
Whole Wheat Penne Pasta Salad
Prep Time: 2 min.
Cook Time: 12 min.
- 1/2 box whole wheat penne, cooked aldente
- 1-2 cups of steamed broccoli
- 2/3 cup sundried tomato
- 2 Tablespoons Parmesan cheese
Crushed red pepper flakes to taste (optional)
Take a stock pot 3/4 full of water and place on stove top with burner on high until water comes to a boil. Add a dash of salt to boiling water which helps to flavor the pasta. Whole wheat pasta flavor can verge on…quite fibrous we’ll call it! So adding the salt helps. Boil for 10 minutes or until aldente. Drain pasta.
While your pasta is cooking steam your greens. Microwave or stove top works, which ever your preference. If you like your cooked green veggies with a bite have a bowl of ice water nearby, after your veggie is cooked for a few minutes dunk it straight into the ice bath to stop the cooking process. This helps to keep your greens snappy…always makes me think of Walter Mitty, “I like your snappy little suit.”
Combine the noodles, broccoli, sundried tomatoes and dressing. Sprinkle on the parm cheese, red pepper if you want it, and mix well.
Best served at room temperature. That my friends is a fresh, fast, and delicious, 15 minute meal!
