It’s the week before Easter. I am definitely getting older because all I can think of next is “this year is going by so fast!” Easter is a wonderful time to gather with friends and family. Which often means I am scrambling at the last minute to pull together menus, get the dog hair vacuumed, clean sheets on the bed. You know the list. And you know it goes on, and on, and on! I love entertaining. Seriously, love it. The prep and planning admittedly can ware me out and leave me scrambling for food in the kitchen that I don’t have to save for our weekend guests. That is where these power bites come to the rescue! Packed with protein and of caloric density which is what you need when you are on the go. However, these sweet little bites also contain flax and chia seeds. This table from the Cleveland Clinic does an awesome job of summing up their health benefits, including other powerhouse seeds:
These power bites in particular are perfect for Easter, a nod to carrot cake! With fresh shredded carrots, sweet plump raisins, and crunchy pecans these power bites will get you through the stress and the mess and make it all worth it! These also require zero time in the oven. So you simply combine the ingredients, roll them into cute little bites, and store them covered in the fridge. You might (just might) have a few left over and can serve them with breakfast along side some Greek yogurt and drizzle of honey for your guests
Carrot Cake Power Bites
Serving Size: 10 – makes about 20 bites
Cook/Prep Time: 15 minutes
- 1 1/2 cups old-fashioned oats
- 1/3 cup pecans, chopped
- 1 T flax seeds
- 1 T chia seeds
- 3/4 nut butter – whatever you have on hand, I used PB
- 3 T agave or honey
- 1/4 tsp. pumpkin pie spice
- 3/4 cup grated carrot, packed
- 1/3 cup raisins
I have no idea why I have honey photographed here because truthfully I used agave. Amateur hour, what else can I say?!
Y’all ready for this?
Take every ingredient and dump it into a large mixing bowl and mix! You’re about done. I do like to spray with coconut (or other aerosol oil) on the inside of my measuring cup whenever I am measuring peanut or other nut butters. It helps not to leave so much goodness behind.
I mean come on! I feel healthier just looking at that bowl of power nutrients.
Stir to combine. Spray hands lightly with coconut oil, or other spray oil that you have available. No need to run to the store…you’ve got work to do.
