Hi, I am Carrie Minerva! Welcome to When Carrot Met Salad, a blog all about cooking and eating, taking photos, and tricking your friends (much like I did) into believing you are domesticated. Hopefully you will click your way to this site and join me on my journey of being adult-ish and laugh along the way. I love to cook comfort food without the calories and stick primarily to a clean eating pescatarian diet. My husband, while handsome, is a carnivore. Therefore, you will find a few recipes sprinkled in for those of you who are meat eaters. Oh, don’t be fooled by my clean eating tendencies. I can put away my own bag of movie theater popcorn by the end of the previews…seriously popcorn will be in my last meal. Eating good food does bring me such joy; it’s all about keeping life in balance. I decided to create this mostly food but also a lifestyle blog to give me a creative outlet. This website is something I have dreamed of since I was in college and started cooking for myself. My job is very left-brained and I always look forward to coming home and cooking for my husband and myself; testing new recipes and living it up in the kitchen. A series of events have occurred over the past few months which I believe God intentionally designed in order to push me in the direction of this blog. Cooking, eating, designing, but mostly serving beautiful food brings me such pure happiness. After all, the best meals are those that are shared with others.
